Deep Fry: Pre-heat oil/ fat to 180°C (350°F). Add the scampi and cook for 4 -4½ minutes until golden brown and crisp. Drain scampi on absorbent paper and serve immediately.Shallow Fry: Fry gently in ¼", medium hot oil / fat for 5 mins, until crisp and golden brown, turning occasionally. Drain scampi on absorbent paper and serve immediately
