Place the product still in its bag in a roasting dish. Add 1 inch of water to the dish. Preheat oven to 200C, refer to the chart for cooking times. Check the internal temperature of the meat. It must reach a minimum of 74C. Remove from the oven and rest for 10 minutes. Remove cook bag and serve, if serving delayed ensure product is kept above 63C, alternatively product can be rapidly chilled to below 5C within 90 minutes and served cold. Cooking from defrost, reduce cooking time by 90 minutes.Do not cover roasting bag with foil whilst cooking.Should the bag over inflate, take care and allow the bag to relax before removing it from the oven. Take care when temperature probing as this makes a small air hole which will allow extra steam to escape.1.5kg 2 hours 30 minutes approx.2.72kg 3 hours 15 minutes approx.
