For best results cook from frozen.Place the product still in its bag in a roasting dish. Add 2,5cm of water to the dish. Preheat the oven to 200C and cook for approximately 2 hours 30 minutes until the the internal temperature reaches 74C. Remove from the oven and rest for 10 minutes. Remove cook bag and serve. If there is any delay in serving, ensure the product is kept at 63C.Alternatively the product can be rapidly chilled to below5C within 90 minutes and served cold.Cooking from defrost, reduce cooking time by 30 minutes.
